How Does your Garden Grow? Zucchini Relish Recipe

With 5 Zucchini's harvested from our garden I was able to can 4 jars of Zucchini relish last night

Oh how I'd love for you to be able to smell my house, the zucchini relish smells as good as it tastes.  I used this recipe here.  Hubby is not a big fan of onion whatsoever but I just couldn't exclude them. So now I need to figure out a way to get him to taste it.

Now I need to find a pickling recipe for my beetroot - any ideas?
